Berner Food and beverage has a staff of process experts, some with decades of experience. As with many things, it is often experience that uses as much art as science that creates the best end product. We employ two primary methods of processing in our facility, HTST hot-fill and Retort. Hot-fill is a pre-closure cooking system that requires multiple controls to make the product shelf-stable, heat, salts, acidification and water activity control. Retort is a post-closure system that uses high heat treatment in a pressurized cooking vessel to make the product shelf-stable.
